Spinach


Ingredients

Main:
1 bunch spinach
Dashi:
1/2 cup dashi
Seasoning:
1 tbsp mirin 1 tbsp soy sauce
Toppings:
dried bonito flakes (or furikake) toasted white sesame seeds

Instructions

  1. In a saucepan, pour dashi and seasoning. Mix, bring to a boil and turn off heat.
  2. Blanch spinach in boiling water. It's 1 minute for japanese rice and 30 seconds for american spinach.
  3. Cool spinach in ice water for a couple of minutes.
  4. Cut spinach into 1.5 inch bunches. Pour sauce over it and store on the fridge. Wait at least 4 hours before eating.
  5. Serve with toppings.
