Shrimp Pasta Primavera


Ingredients

Main:
400g uncooked linguini 1.5L vegetable broth 40 cooked shrimp, chopped
Veggies:
1 zucchini, sliced 1 head broccoli, chopped 1 cloves garlic, minced 1 cup mushrooms, chopped 1 red bell pepper, sliced 10 tbsp fresh basil, chopped 1 tbsp fresh lemon juice
Sauce:
120g cream cheese

Instructions

  1. Bring stock to a boil on a Dutch Oven.
  2. Add the pasta and simmer for 1 minute.
  3. Add all ingredients (except cream cheese), and stir. Simmer for 10 minutes.
  4. Add the cream cheese and simmer for 2 minutes.
