Beef Stew

Ingredients

Beef:
2 kg beef chuck 2 tbsp smoked paprika
Aromatics:
1 yellow onion, roughly chopped 2 garlic cloves, roughly chopped
Liquids:
1 can tomato paste 1/2 cup red wine 1 quart beef broth
Herbs:
1 tbsp dry thyme 1 tbsp dry rosemary 3 bay leaves 1 tbsp herbs de province
Veggies:
2 large carrots, diced 2 large potatoes, diced

Instructions

  1. Season beef generously with salt and pepper. Rub it with paprika. Sear it both sides on a Dutch Oven, then remove. Optionally cut into squares after seared.
  2. Cook aromatics. First the yellow onion, until tender. Then the garlic until fragrant.
  3. Add the tomato paste and cook for about 30 seconds. Deglaze with the wine, then add the broth.
  4. Add the herbs and bring to a simmer. Add back the beef and put the lid on, leaving it slightly ajar.
  5. Cook in the oven at 280F for 2 hours. Then add veggies and cook for another 2 hours.
