Creme de galinha

Ingredients

Liquids:
2 cups heavy cream 1 cube chicken stock
Aromatics:
1 onion, chopped 2 garlic cloves, chopped
Veggies:
1 cup corn 1 cup peas 1 cup carrots, cubed
Others:
4 chicken breasts 2 tbsp taco or barbecue seasoning 2 tbsp flour 1 can tomato paste

Instructions

  1. Season 4 chicken breasts on one side with S&P. Place on a hot Dutch Oven and season the other side. Cook the first side 5 minutes on medium. Turn, cover and cook on low for 15 minutes. Remove to cool.
  2. Sear 1 onion. Once soft add 2 garlic cloves and 2 tbsp flour.
  3. Deglaze with 1 cube chicken stock and 1 cup water.
  4. Add 2 cups heavy cream and 1 can tomato paste and heat to incorporate.
  5. Add some veggies. Typically 1 cup corn, 1 cup peas and 1 cup carrots, cubed
  6. Shred the cooked chicken, then add it back to the pan along with 2 tbsp taco or barbecue seasoning.
